The Fritter Ace Makes Quail Risotto Leftover Fritters

We have caught the first of the winter colds from the grand kids, it is freezing, it is going to rain for 10 days straight, the fire wood is damp, not in the mood for cooking lunch ……..what else to do but make fritters from yesterday’s leftovers!  Honestly, is there anything  I have not frittered yet 😉 It is a super fast comfort food, always popular with the household.

Quail Liver Risotto, or any risotto leftovers,  makes a lovely fritter, crispy on the outside and creamy on the inside, and lunch is ready in no time at all.


Heat about 1cm of oil in a pan  – the fritters should sizzle when they go in

While the oil heats up put the leftovers in a mixing bowl, and add a bit of veg like peas, leftover carrot or potato to pad it out. Add one or two eggs and about 3 tablespoons of flour. Mix well and drop spoonfuls in the hot oil .  When golden on one side turn over until golden on the other side. Serve with a salad.

Go back to reading in bed.

  1. Commiserations on your colds. It is cold here in Northern Tasmania but fine weather at the moment. I don’t have a cold but I do have every part of my body aching thanks to (stupidly) volunteering to rake an acre of leaves. Only managed to collect half of them (3 heaped trailer loads of wet leaves) and I have another day of raking ahead of me BUT when mixed with all of that free horse manure we are picking up today they will be a great start to my new garden beds…sometimes you have to suck it up and just “do it” in order to get what you want. Wish I was eating fritters 🙂

      • We have a lot of organic matter but now we have to get through the large load of firewood logs (more like tree trunks) that we had delivered in the middle of the driveway so that we can’t get the organic matter to the veggie garden aside from wheelbarrowing it there…not a good option (at the moment we can’t even get the wheelbarrow through!) Note to self “plan next time!” sigh
