100 ml Extra virgin olive oil
2 Cloves garlic – finely chopped
4 – 6 Slices home made bread or good Italian style bread like ciabatta
4 Fresh, ripe and sweet tomatoes – coarsely chopped
Small bunch basil
Generous pinch salt
Black pepper
In a large bowl, combine the chopped tomatoes, basil, black pepper, chopped garlic, salt and extra virgin olive oil , mix to combine. In the meantime toast a few slices of home made bread and rub with fresh garlic. Drizzle the warm bread with extra virgin olive oil. Cover the still warm bread with the tomato mixture, and serve immediately. The trick is not to let the mix stand because it becomes watery. ENJOY !!

We may have to bastardise it with some sliced avocado BUT the basics will be excellent olive oil, good ripe tomatoes and fresh garlic from our garden rubbed all over sourdough toasts. You can’t go wrong with that! Oh, LOTS of fresh ground black pepper and some good sea salt as well 🙂

I think I could actually drink the stuff I love it that much. I know it is good for you, but if I took up quaffing it as an aperitif, I recon my days of fitting through doors would be a distant memory 😉

Why are you gluten free? Medical reasons? I do not think I will survive without bread and pasta
It causes me severe stomach pain if I eat it. 😦 We do eat gf bread and pasta but it’s a very poor substitute in my opinion.

All god. I get to remember when I read about delicious posts like this. I LOVE bruschetta and used to eat it at almost every meal when I moved out of home. Fresh Roma tomatoes, Spanish onions, fresh bread and I would add in Bulgarian feta (sheep milk). YU-UM! 😀
